Island Princess Hawaii Mochi-Pop "Makani" Bars

Nothing makes me happier than to create recipes that use products that are made in Hawaii.  Island Princess Hawaii Makani bars are made with mochi-pop which is caramel coated popcorn with Japanese rice crackers.  The bars are a cross between rice crispy treats and Hawaii's hurricane popcorn... hence the name Makani (Windy) bars.

  • 6 bags Island Princess Hawaii mochi-pop
  • 1 cup  salted macadamia nuts, chopped
  • 1/4 cup furikake
  • 1/2 cup white sugar
  • 1/8 cup water
  • 1/2 teaspoon salt
  • 5-6 tablespoons heavy whipping cream
  • 1/2 cup miniature marshmallows
  • 1 tablespoon butter

Cooking Process:

Spray a 9x13-inch baking dish with non-stick cooking spray; set aside.  Toss together the mochi pop, macadamia nuts and half of the furikake in a large bowl; set aside.

In a medium saucepan, combine the sugar, water and salt; bring to a boil over medium heat. Boil, without stirring, until the mixture reaches an amber color, about 8 to 12 minutes. Remove from heat and slowly pour in the heavy cream and butter (the mixture will bubble up and sputter). Immediately add the marshmallows and stir until melted.

Pour the caramel over the popcorn mixture and quickly stir together with a rubber spatula until caramel is mixed into popcorn evenly.

Pour the mixture into the prepared 9x13-inch pan. Spray a small piece of wax paper with nonstick cooking spray and use to press mixture firmly and evenly into pan.  Bake for 15-20 minutes at 300 degrees.  Remove from oven and sprinkle lightly with remaining furikake. Cool completely and then cut into bars. Store in an airtight container at room temperature.
