Mahi Mahi Burgers w/Serrano Mango Salsa

Summertime is always time to fire up the grill and this time I'm doing it slightly healthier with delicious mahi mahi burgers topped with a serrano chile salsa.

  • 1 lb mahi mahi fillet, cut into chunks
  • 1/4 cup cilantro, chopped
  • 2 tablespoons oyster sauce
  • 2 tablespoons mayonnaise
  • 1/4 cup sliced green onion
  • 2 teaspoons minced fresh ginger
  • 1 garlic clove, minced
  • salt and pepper
  • 2 tablespoons vegetable oil
  • 2 teaspoons sesame oil

Serrano Pepper & Mango Salsa

  • 1 mango (Ripe, diced)
  • 1/4 purple onion, small diced
  • 1 lime, juiced
  • 1 tablespoon rice wine vinegar
  • 1 serrano pepper, finely chopped
  • 1/4 cup cilantro, finely chopped
  • pepper
  • salt

Cooking Process:

Combine cilantro, oyster sauce, mayonnaise, green onions, ginger, garlic, salt and pepper in a food processor. Pulse until finely chopped add mahi mahi and continue pulsing until a mousse forms. Split into 4 patties and separate with wax paper or cling wrap. Chill for 1 to 4 hours and allow patties to set.  You can speed this up by putting them in the freezer for 15-20 miutes.

Heat vegetable oil and sesame oil in a large skillet over medium-high heat or a well oiled grill. Add the fish burgers and cook for 3 minutes per side or until just cooked through. Serve on a bun with your favorite toppings or mango salsa.

Serrano Pepper & Mango Salsa

Mix ingredients in a bowl, season with salt and pepper and allow to set in refrigerator for 30 minutes before serving.
