Meatball Stew

This is the perfect dish when you are in the mood for stew but not in the mood to wait for 3 hours.  This dish from start to finish is done in 30-45 minutes.

  • 1 lb. ground beef
  • 1/2 cup panko crumbs
  • 1 egg
  • 1 clove garlic, minced
  • 1 tablespoon salt
  • 2 tablespoons vegetable oil
  • 1 can condensened French onion soup
  • 1/4 cup water
  • 3 medium potatoes, peeled and quartered
  • 1 1/2 cups frozen peas and carrots
  • 1 small can pureed tomatoes

Cooking Process:

In a medium bowl, combine  ground beef, panko bread crumbs, egg, salt and garlic; mix well and shape into 20 meatballs. Heat oil in a large, deep skillet and cook meatballs until all sides are browned. Remove excess oil. To the same skillet add the French onion soup, water and pureed tomatoes.  Add potatoes.  Bring to a boil and reduce heat to low and simmer for 30 minutes. Add water if needed.  Once potatoes are tender, add frozen peas and carrots. Season with salt and pepper to taste.
