Ingredients: Print   Add to cart

  • 2-3 Japanese long eggplant; sliced diagonally
  • 2 medium eggs
  • 1 tablespoon water
  • 1 teaspoon Aloha Aloha shoyu
  • 1/2 teaspoon patis (fish sauce)
  • 1 cup flour
  • 1 cup cornstarch
  • Vegetable oil as needed for frying

Garnish:  Roasted peanuts, coarsely chopped


Cooking Process:

In a skillet or deep fat fryer; warm oil. In a shallow dish; whisk eggs, water, soy sauce and patis well. In a second shallow dish; combine flour and cornstarch. Deep fry eggplant pieces until slightly browned. Drain on paper towels. For service; garnish with peanuts. Serves 4-6.
