Fried Eggplant Recipes
A quick and easy side dish - Eggplant coated in a flavorful egg wash and flash fried to golden crisp!
- 2-3 Japanese long eggplant; sliced diagonally
- 2 medium eggs
- 1 tablespoon water
- 1 teaspoon Aloha Aloha shoyu
- 1/2 teaspoon patis (fish sauce)
- 1 cup flour
- 1 cup cornstarch
- Vegetable oil as needed for frying
Garnish: Roasted peanuts, coarsely chopped
In a skillet or deep fat fryer; warm oil. In a shallow dish; whisk eggs, water, soy sauce and patis well. In a second shallow dish; combine flour and cornstarch. Deep fry eggplant pieces until slightly browned. Drain on paper towels. For service; garnish with peanuts. Serves 4-6.
