Mahimahi

  • 2 eggs
  • 1/8 teaspoon salt
  • Pepper to taste
  • 1 cup ground almonds
  • 4 mahimahi fillets (4 oz. each)
  • 4 Tablespoonsolive oil

Apple Relish

  • 1 red apple, cored, diced
  • 1 small red onion, diced
  • 1 Tablespoon cilantro, chopped for garnish
  • 2 limes, juiced
  • 1/8 teaspoon salt
  • 1 lemon, cut into wedges for garnish

Cooking Process:

1. To make the apple relish: In a mixing bowl combine apples, onions and cilantro. Season with lime juice and salt to taste. 

2. To prepare the fish: In a shallow dish, beat eggs thoroughly. Season with salt and pepper.

3. Spread the ground almonds in a flat dish. Dip the fish into the beaten eggs, drain and coat with ground almonds on both sides. Set aside. 

4. In a large non-stick pan, heat the ghee or oil over medium high heat. 

5. Add the coated fillets and cook for two minutes. Reduce heat to medium and cook for one more minute. 

6. Turn the fillets over and cook for three minutes or until the fish is cooked. Do not allow the almond coating to burn. If you have to remove the fish before it is cooked to hold for some reason, finish it in a pre-heated oven set at 350 degrees for three to four minutes or until it is cooked. 

7. To serve, place fillets on a serving dish with the apple relish and garnish with lemon wedges and cilantro sprigs.
