Salmon

2 lbs. salmon fillet, trimmed to fit onto the cedar plank

1 cedar plank, 12”x6” soaked in water for 15 minutes, remove pat dry

Brine

4 cups water

1/4 cup salt

1/4 cup sugar

Dynamite Topping

1-1/2 cup mayonnaise

2 tablespoon scallions, fine sliced

1 tablespoon pickled ginger, chopped fine

2 teaspoon sriracha chili sauce

1 tablespoon lemon juice


Cooking Process:

Brine

mix together the ingredients for the brine. Place the salmon into a large deep container or baking pan. Pour the brine over the salmon and refrigerate for 25 minutes. After 25 minutes remove the salmon and pat dry

 

Place the salmon fillet onto the cedar Plank. Spread topping onto the salmon covering the entire surface. Place the prepared salmon onto a large baking pan and bake in a 350 degree pre-heated oven for 20-25 minutes till golden. Garnish with additional pickled ginger, tobiko, sliced scallions and serve
