David Sumidas Hawaiian Beef Shank Stew

2-3 large beef shanks

1 medium local sweet onion, cut in wedges

1 tablespoon oil

2 cloves garlic, minced

2 (14-1/2 oz.) cans beef broth

2 tablespoons worcestershire sauce

1/2 cup wine

2 bay leaves

1 teaspoon dried thyme

2 carrots, peeled and cut into chunks

2 stalks celery, cut into chunks

2 potatoes, peeled and cut into chunks

Salt and pepper to taste

 


Cooking Process:

In a large pot, heat oil over medium-high heat and fry beef shanks until lightly browned, turning over, about 5 min. Add onion and fry about 3 min. Add garlic and fry about 1/2 min. Add remaining ingredients and simmer 1 1/2-2 hours until beef is tender and falling off the bone.
