Kawika Kahiapos Chicken and Pork Char Siu Sliders

Hawaiian music legend Kawika Kahiapo joins us on the set of Cooking Hawaiian Style to share his recipe for char siu chicken and pork sliders made with his homemade char siu sauce.

US Metric

Char Siu Sauce Recipe
1 cup Aloha shoyu
1 ½ cups sugar
1 - 2 cubes Chinese red bean curd
1 cap whiskey
½ teaspoon Chinese 5 spice
¼ cup hoisin sauce
1 tablespoon Hawaiian salt
Red food coloring optional
2 lbs chicken thighs
2 lbs pork butt, sliced into 6”x 2” strips
1 package buns
1 package coleslaw mix

Dressing
1 cup mayo
3 tbs ketchup
1 tbs soy sauce
1 tbs oyster sauce
3 tbs sesame oil

Garnish
Fried Won Ton Pi


Cooking Process:

Char Siu Sauce
Mix all ingredients in a bowl until all of the ingredients are mixed well and the sugar is completely dissolved.  Marinate chicken thighs and pork overnight. Cook chicken and pork on grill and set aside until ready to serve.

Dressing
Mix ingredients in bowl and set aside in refrigerator until ready to serve.

Assembly
Take your favorite rolls and stack a chicken and pork on each roll. Top with cabbage, dressing and garnish with crispy wonton chips.
