Sean Robbins Portuguese Sausage Carbonara
Singer song writer Sean Robbins made some creative pasta with Portuguese sausage. Italy meet Portugal, Portugal meet Italy. I always loved using Portuguese sausage with the my hamburger for spaghetti but never thought of making a carbonara.
The oil and from the sausage and the cheese and pasta fit nicely and taste ono. This is a simple recipe that’s quick and easy. Moms: this is perfect meal if you don’t have time and if you make plenty like my mom used to do, every one gets some for lunch. Toast some bread with butter and make some Portuguese sausage carbonara.
3 tablespoons extra virgin olive oil
8 ounces Portuguese sausage, diced
1 pound spaghetti, cooked
1 1/4 cups freshly grated parmesan
4 large eggs, yolks only
freshly ground black pepper
salt for boiling pasta
*save ¼ cup pasta water
Boil water and cook pasta until al dente. In a pot, cook Portuguese sausage until golden brown. Add cooked spaghetti and ¼ cup pasta water. And toss well. Remove from heat, season with salt and pepper and add scrambled yolks and grated parmesan cheese. Toss well and serve.
Garnish: Garnish with additional parmesan cheese.
