CURE A COLD GINGER SOUP
They say ginger has curing elements. A go to soup for my household, spicy and salty, very soothing.
- 2 tsp. sesame seed oil
- 1 TB fresh ginger, grated
- 2 cloves garlic, minced
- 4 stalks green onion, chopped, whites and greens separated
- 6 c. chicken broth
- 1 piece chung choi (salted, pickled turnip) soaked; drained, finely chopped Garnish:
- chopped fresh cilantro
In a saucepan over medium heat, saute ginger, garlic and whites of onion in oil. Add broth and chung choi; bring to a boil. Reduce heat; simmer 10-15 minutes.
Garnish with greens of onion and cilantro. Serves 4.
