SWEET POTATO MOCHI PATTIES
Most of these never make it to the table. Yummy mochi treat that’s fried! The sweet potatoes add such a great flavor and texture to this dessert good to snack on all day long.
4 c. Okinawan sweet potatoes (purple), boiled, peeled, mashed 1 ½ c. mochiko flour (sweet glutinous rice flour) 1 c. all-purpose flour 1 ¼ c. water 1/4 c. butter, melted 2 ¼ c. brown sugar oil for frying
In a mixing bowl, combine flours, water and butter. Stir in potatoes and sugar. Mix well. Shape into patties. In a skillet over medium heat; sauté in oil until lightly browned on both sides. Drain on paper towels.
