Edamame has become such a popular item here. You will find it used in various stir fry recipes, in soups and even in casserole dishes. A unique change to the typical chickpea hummus, you can now find versions of Edamame Hummus in your local grocery stores. Very healthy and tasty.
2 c. edamame, shelled boiling water as needed 1 clove garlic 4 stalks green onion, chopped 2 TB Aloha shoyu 2 TB lime juice 2 TB rice wine vinegar 2 TB mirin 1 TB tahini 1 tsp. wasabi powder 1 TB olive oil 1 TB sesame seed oil ½ tsp. salt
Place edamame in a colander. Pour boiling water over edamame. Drain. In a food processor; place all ingredients. Pulse until smooth. Season with salt.
Serve with pita chips, crudites. Makes 2 cups.
