Chili Oil (Rayu)
A version of the popular rayu found at many Ramen Restaurants as a standard table condiment. Use it as a spicy addition to any of your recipes, add it to dipping sauces or in any noodle dressing recipes.
1/3 c. dried red pepper flakes 1 tsp. Gochugaru (Korean red pepper powder) 1 ½ c. peanut oil ¼ c. sesame seed oil
In a saucepan over medium low heat; combine all ingredients. Simmer 10-12 minutes. Remove from heat; allow to cool. Transfer into container.
Makes 1 34 cups.
