Hari Kojima's Scalloped Potatoes
In memory of Hari Kojima. This Scalloped Potatoes is one of his delicious recipes that he shared with his many friends and fans.
- 4 large potatoes
- 8 slices bacon, cut into 1/2 inch pieces
- 1 medium onion, minced fine
- 1 can Cream of Mushroom soup (10-1/2 oz)
- 1 cup milk
- sliced American cheese
Brown bacon pieces and onion in a sauce pan. When done, prepare potatoes by peeling off skin, cutting in half lengthwise, and slicing the halves thinly (about 1/8 inch thick). Place all cut potatoes in casserole dish or baking pan. Mix in bacon mixture, mushroom soup, and milk. When thoroughly mixed, place cheese slices all over the top of potatoes. Sprinkle paprika for color and bake for about an hour at 375 degrees F. When potatoes are soft they're done.
Serve warm. You may want to eat this dish to compliment a main course.
