PAPA-STYLE SHOYU CHICKEN
A dear friend invited some co-workers over to his house, very unexpectedly. Mom had a big pot of this on the stove, like mom’s do, anticipating visitors while her son was in town for business. A take from a standard local favorite, but with the flavors of pineapple and added textures from the water chestnuts. Simple and delicious.
- 3-4 lb. chicken thighs
- 1 c. each Aloha shoyu, pineapple juice, brown sugar, firmly packed
- 4 cloves garlic, crushed
- 4 thick slices fresh ginger, crushed
- 4 stalks green onion, 2-inch slices
- 1 (8 oz.) can whole water chestnuts, drained
In a saucepan over medium heat, bring soy sauce, juice and sugar to a boil; stirring until sugar dissolves. Add chicken, garlic, ginger, green onion and chestnuts. Reduce heat; simmer 35-40 minutes. Serves 4-6.
