YELLOW GINGER RICE
A wonderfully fragrant side dish full of complex flavors. Pair this with some spicy curry or vegetable dish.
2 tsp. sesame seed oil 2-inch cinnamon stick 1 tsp. whole cumin seeds 2 c white rice, washed 1 c. brown rice, washed 2 c. chicken broth 1 ½ c. coconut milk 1 tsp. salt 2 tsp. fresh ginger, chopped 1 tsp. turmeric 3 pc. lemongrass root, bruised
In a saucepan over medium heat; warm oil. Add cinnamon stick and cumin. Cook until cumin browns; about 1 minute. Add rice; stirring until rice is coated well. Transfer into a rice cooker with remaining ingredients. Cook as directed. Discard cinnamon stick and lemon grass. Fluff with a fork.
