Hasu (Lotus Root)

A traditional dish for our family to enjoy on New Year ’s Day, along with our other Japanese dishes. Similar style of preparation as Kinpira (Gobo). Hasu is a great ingredient for vegetarian dishes.

3 small hasu (lotus root), peeled, thinly sliced, soak in water 30 minutes, drain
2 TB dried shrimp
2 TB vegetable oil
2-3 TB sugar, as needed
1/4 - 1/3 c Aloha shoyu, as needed
1 tsp. dried chili pepper flakes


Cooking Process:

In a skillet over medium heat; sauté shrimp in oil. Add hasu; stir fry 2 minutes. Stir in sugar; cook 5 minutes. Add soy sauce and chili pepper flakes; cook 2 minutes.
