Portuguese Split Pea, Kale & Ham Soup
A comforting and satisfying soup that can easily be enjoyed as your main dish. Tender ham and spicy sausage simmered in a rich and flavorful broth, finished with healthy kale.
2 each smoked ham hacks 6 oz. Portuguese sausage; thinly sliced, rounds 1 lb. (2 1/3c.) split peas 1 large onion, coarsely chopped 2 cloves garlic, chopped 2 medium carrots, peeled, ¼-inch rounds 8-10 c. chicken broth, as needed ½ tsp. freshly ground black pepper 2 bay leaves 1 medium bunch kale (3-4 c.), stems removed, coarsely chopped
In a large saucepan over medium high heat; place all ingredients, except kale. Bring to a rapid boil. Reduce heat. Simmer 2 hours. Remove ham hocks; allow to cool for handling. Add kale into soup. Add additional broth as needed to bring to desired consistency. Simmer additional 10 minutes; until kale is tender. When ham hocks are cool enough to handle; shred and return to soup; optional to discard skin or return to soup. Serves 6-8.
