Glazed Pineapple Cake
My girlfriend calls this her “bake and take cake.” Great one to take to the park for the soccer games or to the neighborhood gathering. Never have to worry about taking home any leftovers. Moist and delicate with a sweet savory pineapple glaze.
¾ c. butter, softened 1 ½ c. sugar 1 tsp. vanilla extract 3 large eggs 2 ½ c. all purpose flour 1 tsp. baking soda 1 tsp. salt 1 c. buttermilk ½ c. crushed pineapple 1 c. macadamia nuts, chopped Glaze: ½ stick butter 1 ½ c. powdered sugar 1 c. crushed pineapple, with liquid
Preheat oven to 350 degrees. Lightly grease a 9x13-inch baking pan. In a mixing bowl; cream together butter and sugar. Add eggs and vanilla. Onto waxed paper; combine dry ingredients. Add into butter mixture; alternately with milk. Stir in pineapple and nuts. Pour mixture into prepared pan. Bake 35-40 minutes. In a saucepan over medium heat. Combine glaze ingredients. Bring to a boil. Remove from heat. Cool before glazing cooled cake. Cut into squares. Serves 10-12.
