Kinoko Gohan (Mixed Mushroom Rice)
A flavorful vegetarian rice dish, we love these “one pot” dishes. The recipe calls for cooking the rice in a dashi broth or adding ingredients to flavor the rice. A very simple and easy dish to prepare. Great for pot lucks.
5 c. rice, washed *2 c. soaking liquid from mushrooms * water as needed OR 5 c. dashi *4-6 inch piece kombu seaweed *1-2 TB Aloha shoyu *1 TB sake 6 large dried shiitake mushrooms, soaked, stems removed, chopped ½ lb. shimeji mushrooms, coarsely chopped ½ lb. oyster mushrooms, coarsely chopped 1 (4.2 oz) bottle nametake mushrooms 2 pc. aburage, coarsely chopped 1 inch ginger, peeled, finely chopped
Place all ingredients into a 10-cup rice cooker. *Note: If using dashi, eliminate soaking liquid, kombu, soy sauce and sake. Cook as directed. Remove kombu before serving. Serves 8-10.
