Spanish Rice with Portuguese Sausage
A quick and easy side dish. We added our favorite Portuguese sausage giving it a bit of a kick. This recipe is hearty enough that you can enjoy this as a meal. Feel free to adjust the spice to your taste.
1 lb. ground beef 1 (6 oz) Portuguese sausage (spicy), finely diced 1 medium onion, chopped 1 medium green bell pepper, seeded, chopped 2 cloves garlic, minced 2 TB vegetable oil 1 (16 oz) can stewed tomatoes, with liquid 1 (4oz.) can sliced black olives, drained 1 c. rice water as needed 1 ½ tsp. chili powder, as desired 1 tsp. dried oregano ½ tsp. salt 1/4 tsp. red pepper flakes, as desired 1/8 tsp. garlic powder
In a measuring cup; place liquid from tomatoes. Add water to measure 1 cup. Set aside. In a skillet over medium heat; brown beef, sausage, onion, bell pepper and garlic in oil. Stir in remaining ingredients. Bring to a boil. Reduce heat. Cover; simmer 30 minutes until rice is tender. Serve 6.
