Island Princess Macadamia Nut Sauce (Kimo & Boots Style)

I spent a lot of time researching the famous Kimo & Boots Macadamia Nut Sauce Recipe. For the most part, most of the ingredients in this recipe are the same except for the heavy cream (most recipes use evaporated milk) and the grinding and toasting of the macadamia nuts which I think is where the flavor comes from. 

 

This is not my recipe...it was given to me via DD who got it from a friend.  I tried this recipe out and it tastes really good.  With that said, give it a try and let me know what you think!

US Metric

3/4 C Island Princess Macadamia nuts
2 TB Butter
3 TB Sugar, 1 tsp Salt
2 TB All-Purpose Flour
1-2 C Heavy Cream (fresh unsweetened whipping cream)
2 tsp Vanilla Extract
3/4 tsp Lemon Juice


Cooking Process:

Process the Macadamia nuts in a food processor until finely ground or becomes a paste. Spoon the Macadamia nut into a saucepan and toast over medium high heat until fragrant. Lower the heat to medium and add the butter, stirring until melted. Stir in flour and cook for 1 minute. Slowly pour in the cream, constantly whisking the whole time. Add sugar, salt, and vanilla extract into the pan.

Cook until thickened, stirring constantly; if too thick - add cream a little at a time to desired consistency. Stir in lemon juice. Serve warm.
