Island Creamed Spinach
A spin on the very traditional steak house creamed spinach. This recipe adds an island flavor using coconut milk for a rich and creamy texture.
- 3 (10 oz.) boxes frozen chopped spinach, thawed, drained well
- 1 (12 oz.) can coconut milk
- Pinch nutmeg, salt, freshly ground black pepper
In a saucepan over medium heat; combine spinach and coconut milk. Bring to a boil; reduce heat. Simmer 10 minutes. Season as desired with nutmeg, salt and pepper. Serves 6.
