US Metric

1-2 lbs tuna cubed
1 tsp. kukui nut (optional)
1 tsp. sesame oil
1 tsp. Aloha shoyu
1 tsp. green onion, chopped
1 tsp. Hawaiian salt
Pinch chili flakes

Dynamite Sauce
A pinch of Hon Dashi pellets
1 tablespoon of half and half
3/4 cup Kewpie Mayonnaise
1 teaspoon of Sriracha
1 tablespoon of masago (smelt roe)

Order Poke Seasoning Mix

Cooking Process:

Lightly season tuna with kukui nut, sesame oil, soy sauce, green onion, hawaiian salt and chili flakes.  Set aside.

Dynamite Sauce
In a separate bowl, combine the dashi, half & half, mayonnaise, sriracha hot sauce and mix to the consistency of a milkshake. Gently fold in masago (fish roe) and chill.

To Serve
Pour dynamite sauce over poke mixture or for individual servings, put poke mixture into individual bowls or plates and spoon dynamite sauce over the top. Garnish with green onions and masago.
