Arroz Caldo (Filipino Chicken Rice Soup)
A simple yet comforting soup that is done in a flash. Arroz Caldo (Filipino Chicken Rice Soup) is often times enjoyed for breakfast after a night of one too many. It’s a feel good satisfying soup.
1 1/2 lb boneless chicken, 1-1/2 -inch pieces
1 small onion, chopped
½-inch ginger, peeled, slivered
3 cloves garlic, minced
2 TB vegetable oil
1 TB patis (fish sauce)
1 c. rice, rinsed
3 (14.5 oz.) cans chicken broth
garnish: chopped green onion, lime wedges
In a saucepot over medium heat, sauté chicken, ginger and onion in oil 2 minutes. Add garlic and cook 1 minute. Add patis; rice and chicken broth. Mix well and bring to a boil. Reduce heat. Cover, and cook 20 minutes, until rice is cooked.
For service: Garnish with green onions and lime wedges. Serves 4.
