Cucumber Watermelon Salad
Perfect picnic dish. A great warm day salad with vibrant flavors of fresh mint and lime.
2 Japanese (seedless) cucumbers, halved lengthwise, thinly sliced
2 lbs. watermelon, seedless removed, cubed
1 small bunch mint, leaves torn
3 TB vegetable oil
2 TB lime juice
½ -1 tsp. salt
¼ -½ tsp. freshly ground black pepper
In a large mixing bowl; whisk together dressing ingredients. Toss with watermelon, cucumber and mint. Taste for seasoning.
Serve immediately. Serves 8-10.
