Filipino Champorado (Chocolate Rice Porridge)
Filipino Champorado is a common and favorite Filipino breakfast rice porridge. Sweet and hearty and very chocolaty.
1 c. glutinous mochi rice, rinsed, drained
1 (13.5 oz) can coconut milk
water as needed
½ c. unsweetened dark cocoa powder
1 c. brown sugar
1 c. sweetened condensed milk
In a mixing bowl; dissolve cocoa powder, sugar and salt in ½ cup of warm water. Set aside. In a measuring cup; add water to coconut milk to make 2 ½ cups. Transfer into a medium saucepan with rice. Over medium heat; stirring continually; bring mixture to a boil. Reduce heat and cook for 8-10 minutes, stirring frequently to prevent scorching. Add into rice mixture. Stirring frequently; continue cooking until rice is cooked through and mixture is thickened about 10-12 minutes.
For service: Spoon pudding into serving bowls; drizzle with swirls of condensed milk. Serve hot or cold. Serves 4-6.
