Ono Stuffed Mushrooms
A fast and simple pupu dish. Tender mushrooms with a delicious bacon and Portuguese sausage stuffing.
1 lb. large button mushrooms, stems removed and finely chopped
½ lb. bacon, small dice
½ (6 oz.) Portuguese sausage, small dice
3 stalks green onion, chopped
3 TB mayonnaise
Preheat oven to 400 degrees. In a skillet over medium heat; sauté bacon and sausage until crisp. Drain on paper towels. Transfer into a mixing bowl. Set aside. Add finely chopped mushroom stems into skillet and cook until limp. Combine with bacon mixture. Stir in mayonnaise and green onion. Spoon into mushroom caps. Place onto baking sheet pan. Bake 15-20 minutes until mushrooms are tender and filling is heated through. Set oven to broil and broil mushrooms for 5 minutes until stuffing is bubbly.
Serve immediately. Serves 10-12.
