Pork Black Bean

An adaptation of my brother in law’s recipe. One of those simple comfort food dishes you will want to make big batches of. Even better warmed the next day.

4 lbs. boneless pork, cubed
1 tsp. salt
½ tsp. freshly ground black pepper
¾-1 c. all purpose flour
3 TB vegetable oil
3 TB salted black beans, rinsed, drained
4 cloves garlic, minced
3 TB Aloha shoyu
3 TB oyster sauce
3 TB sake
2 TB sugar
2 (12 oz.) can chicken broth
¼ c. cornstarch mixed in ½ c. water


Cooking Process:

Season pork with salt and pepper. Dredge lightly in flour. In a large skillet over medium heat; brown pork in oil. Work in batches if necessary. Add black beans, garlic, soy sauce, oyster sauce sake and sugar. Stirring until well combined. Add broth and bring to boil. Reduce heat; simmer 30 minutes. Stir in cornstarch slurry until slightly thickened. Continue simmering 15 minutes. Get the steamed rice ready!
