Landon’s Sausage & Spinach Pasta
My oldest nephew just loves to dabble in the kitchen, how wonderful for my sister and her family. This Sausage and Spinach Pastais one of his fabulous creations. A rich and hearty dish your family will love and ask for again and again.
1 lb. linguini, cooked according to package directions
5 -6 thick-slices bacon, chopped
¾ lb. Italian sausage
6 oz. button mushrooms, sliced
1 medium onion, thinly sliced
3 cloves garlic, chopped
1 large bunch spinach leaves, washed, drained well
1 (12 oz.) can chicken broth
2 c. whipping cream
1 c. milk
Freshly ground black pepper
grated parmesan cheese
In a large skillet over medium heat; brown bacon. Remove and drain on paper towels. Into skillet brown sausage until cooked through. Add mushrooms; cook 3-4 minutes until browned. Add onions and garlic; cook 2 minutes until onions are tender. Add chicken broth; bring to a boil. Reduce heat and simmer 5-8 minutes until slightly reduced. Add cream, milk and spinach; stirring until just heated through.
For service: Divide pasta onto serving dishes and spoon sausage mixture onto pasta. Top with bacon. Pass the parmesan cheese. Serves 4-6.
