Palu Sami Casserole
A quick and easy version of an island favorite, but made into a casserole dish when time is not on your side. Salty corned beef cooked with sweet and yummy coconut milk and spinach replaces the luau leaves making for a speedy recipe.
2 (12 oz) cans corned beef
4 (10 oz.) boxes frozen chopped spinach, thawed, drained well
2 (13.5-14 oz.) cans coconut milk
Preheat oven to 350 degrees. In a 3-4 quart casserole dish; layer one can of corned beef, half of spinach and one can of coconut milk. Repeat layers. Bake 20-25 minutes. Serves 6-8.
