Papaya Mango Salsa
Came up with this after a trip to my neighborhood farmers market. Fresh and vibrant flavors of island fruits. Enjoy this Papaya Mango Salsa on some grilled, baked or pan-fried fish or serve it on top of tacos or burritos.
- 1 c. ripe papaya, chopped
- 1 c. ripe mango, chopped
- 1 c. pineapple, chopped
- 2 stalks green onion, chopped
- ½ small red bell pepper, seeded, minced
- 1 small red jalapeno pepper, seeded, minced
- 2 tsp. honey
- zest of 2 limes
- Juice of 2 limes
- Pinch salt
In a mixing bowl; combine all ingredients gently.
Serve immediately. Makes 3 ½ cups.
