My mom’s LaOlla Oxtail recipe containing garlic, bay leaves, peppercorn, carrots, potatoes, peppercorns and served with rice.

3 lbs oxtail (have butcher cut up in smaller pieces)

3 cloves garlic

2 bay leaves

12 whole peppercorn

splash vinegar (cider)

1 cup of cut-up (in ½ inch chunks) carrots

2 cups potatoes (cut-up in ½ inch) chunks

salt to taste

Brown oxtail in cooking pot to melt fat/oil out-Drain fat/oil

Boil water separately then add to oxtail in pot (enough to cover meat)-add peppercorns, cider vinegar, bay leaf

Add salt to taste

Boil until meat softens (add water as needed) for about 1 to 1 ½ hrs-add diced potatoes and carrots

Continue to simmer until potatoes and carrots are cooked.

Serve with rice
