Simple Pickled Daikon
A recipe shared by my girlfriend’s grandmother. She serves this or versions of this recipe using different vegetables at every meal. Reminds me of being at my grandma’s home.
4 small daikon (turnip), peeled, thin sliced rounds
¼ c. Hawaiian salt
1 c. water
½ c. mirin
½ c. sugar
¼ c. rice wine vinegar
2 TB salt
2 Hawaiian chili peppers, thinly sliced
Place daikon in a colander; toss generously with salt. Place plate over daikon and weigh down with a measuring cup of water or canned good. Allow to sit 2-3 hours. Rinse and drain daikon well. In a saucepan over medium heat; combine water, mirin, sugar, vinegar and salt to a simmer. Stirring until sugar and salt dissolve. Remove from heat; add chili peppers. Cool. Transfer daikon into desired container; pour syrup mixture over daikon. Refrigerate overnight. Serves 3-4.
