Crockpot Chicken Long Rice

This one-pot recipe for chicken long rice, a traditional Hawaiian dish is so easy and so simple but will reward you with a hearty home-cooked meal.  Just throw everything in the slow cooker and cook on high for 4 hours or low for 8 hours.

US Metric

2 cans chicken broth
4 chicken thighs
2 bundles of long rice
1 small brown onion
4 green onions
couple of slices of ginger
dash Aloha shoyu
salt & pepper to taste

Cooking Process:

Put the chicken in the bottom of the pot. place the long rice bundles next to them. Chop onions and throw on top. Nestle the ginger into the mix.  Pour cans of chicken broth over the ingredients, then add enough water to cover the chicken and the noodles.  Turn on the pot to HIGH.  Cook for 4 Hours or 8 hours on LOW  Salt & Pepper, shoyu to taste.  Serve chicken long rice with a bowl of poi on the side or some steamed rice.

Chicken long rice taste the same as cooking it on the stove. Only putting all ingredients into the pot and slow-cooking. Mahalo.
