Paul’s Creamy Cucumber Dressing

I learned much about cooking Italian dishes from taking notes while watching my former grandmother in law who spoke no English and also from my former brother in law. This is the most recent recipe he's shared with me. Wonderful tossed with some spring mix and arugula or as he recommends, simply served as a dip for crudite.

US Metric

1 large cucumber, coarsely grated*
¼ Maui onion, grated**
1 clove garlic, grated
juice of 1/2 lemon
2 dashes Tabasco
2 dashes Worcestershire sauce
1 tsp. Aloha shoyu
5 oz. sour cream
4 TB mayonnaise


Cooking Process:

* Use largest hole in grater to grate cucumber. ** Use smallest hole in grater to grate onion and garlic. Squeeze as much liquid from the grated cucumber. Place cucumber in a mixing bowl with remaining ingredients. Toss well to combine. Refrigerate 2 hours. Can be used for a salad dressing or with crudite. Makes 1 ¾ cups.
