Slow Cooker Apple Cinnamon Bread Pudding

6 c. crusty day old bread, cut into 1/2-inch pieces

2 medium-Granny Smith apples, peeled, cored, shredded

1/2 c. golden raisins

4 large eggs

3/4 apple juice

14-oz. can sweetened condensed milk

1 ½ tsp. cinnamon

¼ tsp. allspice

¼ tsp. nutmeg


Cooking Process:

Coat the insert of a large (6-quart) slow cooker with butter. Add bread pieces to cooker. Top bread with apples, raisins and optional chocolate chips. In a medium bowl, whisk together eggs, apple juice, condensed milk and spices. Pour over bread mixture. Press down with a spatula to completely moisten bread.  Cover and cook on low setting 3 hours, or until a knife inserted in the center comes out clean. Check pudding after 3 hours, continue to cook an additional 10-15 minutes until the pudding is done. Serves 8-10.
