School Kine Turkey Corn Scallop - I remember our elementary school used to serve turkey corn scallop for lunch and till today, I still re-create this dish the day after Thanksgiving. Its the perfect way to enjoy leftover turkey and gravy.
- 1 cup leftover turkey, shredded
- 1 cup leftover turkey gravy
- 1 small bag frozen corn
- 1 cup half & half
- 3 tablespoons butter
- 2 tablespoons flour
In sauce pan, melt butter, add flour and stir quickly to cook flour. Add half & half, gravy, turkey and frozen corn. Cover and simmer for 10 minutes. Serve over rice or mashed potatoes. Go on diet the next day!
