

Kalua Pig Taquitos
I've been wanting to try making these for a long time. I was taught how to make beef taquitos while still in college by one of my friends Yesenia. Whenever I would cook them for my family, everyone would go crazy. I decided to take the basic idea but use Kalua pig (pulled pork) instead...they are so good and so easy to (I cheat by using the store-bought ono brand kalua pig). You can use store bought or try one of our crock pot kalua pork recipes.





1 container ono brand Kalua pig, thawed
1 package corn tortillas
lettuce, sour cream, salsa, guacamole
oil for frying
heat a pan with about an inch and a half of corn oil. Be sure not to over heat as the oil will catch on fire. Dip the corn tortillas in the hot oil using tongs for 2-3 seconds. This makes the tortilla more pliable. Pull the tortilla out of the oil and onto a cutting board. Put a tablespoon or so of kalua pig into the tortilla and roll. Allot to sit as you continue making and rolling your taquitos. Now grab the rolled taquito with that tongs and be sure to grab it in a way that will allow you to maintain the shape. You want to dip the taquito in the hot oil and hold it with the tongs for a good minute or 2 to ensure that the taquito doesn't unravel in the oil. Once it starts to hold its shape, continue on with putting the next taquito in the oil and repeat until all taquitos are fried to a crisp.
To serve: place 3 or 4 taquitos on a plate and garnish with whatever you feel like..you can use shredded lettuce, sour cream, salsa, guacamole, olives, tomatoes...whatever makes you happy!
