Fried Pork Chops w/Lomi Tomato

This is a dish that has been passed down from my mother-in-law "mama" to her children and ultimately to my children.  The food was good and simple back then and we just had this for dinner tonight.  This recipe is dedicated to the most wonderful person that you could ever meet... brimming with love and aloha.  We all love and miss you Mama!

3-4 Good sized pork chops or pork steaks

3-4 Large extremely ripe tomatoes

2 Tablespoons patis

Salt & Pepper to taste

Cooking Process:

Fry pork chops in oil until desired crispiness.  Cut in slices and set aside.  In a large bowl, put sliced tomatoes, salt, pepper and patis.  Lomi or massage the tomatoes with your hands.  The salt will draw some of the liquid out of the tomatoes and create a delicious sauce.  Add the cooked pork chops and massage with tomatoes.  Serve with hot rice!
