Homemade Snickers Candy

Well, kind of homemade as I use store-bought caramels...but feel free to make your own caramel as well.  I made this Snickers Candy with macadamia nuts and it was really good as well... how could it not be???

First Layer

  • 4 tablespoons (1/4 cup) light corn syrup
  • 4 tablespoons butter, melted
  • 2 tablespoons peanut butter
  • 1 teaspoons vanilla 
  • 2 1/2 cups confectioner’s sugar

Second Layer

  • 2 cups caramels (about 40)
  • 4 tablespoons (1/4 cup) light corn syrup
  • 1 cup dry roasted peanuts
  • 1 pkg. (12 oz.) bittersweet or milk chocolate chips

Cooking Process:

Use a stand mixer with the mixing blade on medium-low speed and blend the corn syrup, butter, peanut butter and vanilla until smooth. Slowly add the confectioner’s sugar a little at a time until the mixture begins to resemble smooth dough. If the dough is too crumbly, add a little more butter. If it’s too liquid, add a little more sugar.

Press the mixture into an 8x8 baking pan, and slide the pan into the fridge while you prepare the caramel. Unwrap the caramels and place in a double boiler or small saucepan, along with the corn syrup. Heat, stirring, over medium-low heat until caramels are melted. Stir in the peanuts. Remove baking pan from the fridge, spread the caramel peanut mixture on top of the chilled sugar layer, and return the baking dish to the fridge. Chill for 20 minutes or until candy has hardened.

Meanwhile, melt the chocolate. This can be done in a double boiler, or in the microwave in 2-3 minutes, stirring halfway. Remove the candy from the fridge, and slice into candy bar shape (I like a rectangle about 1” x 2 ½”). You can cut the mixture in the pan, or remove the block to a cutting board. Using two forks, roll the candy bars in the melted chocolate, and place on a tray covered with wax paper. Repeat with all pieces of candy. Chill for 30 minutes and serve .
