  • 4 Egg Whites
  • 1 Whole Egg
  • 3/4 cup fine caster sugar
  • 2 3/4 Cup Cake Flour
  • 1/2 cup milk
  • 1/2 cup coconut milk
  • 2/3 Cup taro powder
  • 1 1/2 blocks butter, softened
  • 1 tablespoon Baking Powder
  • 1 tablespoon Vegetable Oil
  • 1 teaspoon Vanilla Extract

Taro cream cheese frosting

  • 1 8oz package cream cheese
  • 1 block butter, softened
  • 2 teaspoons milk
  • 1/2 cup taro powder

Cooking Process:

Preheat the oven to 350 degrees F.  Mix dry ingredients in large bowl. Add butter and mix slowly adding the egg whites then the whole egg.  Add oil, milk and vanilla extract and mix until smooth batter forms.  Do not over mix. 

Put a cupcake tin in each muffin tin and carefully pour batter into each cup just over 1/2 way full.

Bake for 20-25 minutes or until a toothpick inserted into the center of each cupcake comes out clean.


Allow cream cheese and butter to sit at room temperature for 30 minutes.  In a large bowl, combine  cream cheese, butter, milk, and taro powder.  Beat on medium speed until light and fluffy.  The color should be a consistent purple.  Gradually add powdered sugar until icing reaches a smooth creamy consistency.
