Its been a while since I've made this and decided to change it up a little by adding peach jello pieces into the custard. It was ono-licious!
- 2 cups half & half
- 1 cup fresh mango pulp (or use frozen mango)
- 2 large eggs
- 1/2 cup sugar
- 1/2 teaspoon vanilla extract
- 1 1/2 teaspoons cornstarch
Garnish: fresh mango slices, whipped cream, mango/peach jello pieces...whatever you desire
Peel and puree the mangoes and keep aside. Bring half & half to a boil and switch off the flame. Whisk together eggs, sugar and corn starch until well combined. Now add hot milk little by little and combine well. Transfer the contents into a double boiler and cook in a low flame . Stir constantly for around five minutes. Add in vanilla essence and switch off the flame. Let it cool and gently stir in the mango pulp. Cover and chill in refrigerator for two to three hours. Garnish and serve. In this version, I put peach jello pieces into the custard just before it set and it was ono-licious!
