Simple Fruit Salad Tossed w/Coconut Honey
This fruit salad is perfect as a side dish, dessert or even for breakfast. It is super easy to make and you can control how sweet it is by adjusting the sugar or honey yourself. Sometimes if the fruit is sweet enough, I don't even use sugar or honey.
1 cup fresh dragonfruit, cut into cubes
1 cup fresh mango, cut into cubes
1 cup fresh papaya, cut into cubes
1 cup fresh pineapple, cut into cubes
1 cup fresh coconut milk
sugar or honey to taste
*feel free to use your favorite fruit or seasonal fruit...fresh frozen works well too!
Prepare fruit and put into bowl. Whisk sugar or honey into coconut milk, a little at a time until desired sweetness is achieved. Remember that the fruit is already sweet, so you shouldn't have to make it too sweet. Pour coconut mixture into fruit and lightly toss. Top with toasted coconut or nuts if desired.
