Lilikoi Cupcakes w/Whipped Cream Frosting
A basic cupcake recipe with a light and fluffy whipped cream frosting. I used fresh passion fruit - seeds and all to garnish my cupcakes.
- 1 cup flour
- 1 teaspoon baking powder
- 2 eggs
- 1/3 cup butter
- 1 tablespoon vegetable oil
- 1/2 cup sugar
- 1/4 cup aunty lilikoi unsweetened passion fruit juice
Whipped Cream Frosting
- 1 (8 ounce) package cream cheese, softened
- 1/2 cup white sugar
- 1 teaspoon vanilla extract
- 2 cups heavy cream
*feel free to add guava or passion fruit concentrate to flavor frosting
Preheat the oven to 350 degrees Fahrenheit.
Place cupcake holders in a muffin tin.
Mix the flour, salt, and baking powder in a medium bowl. Beat the sugar, butter in a large bowl. Add the eggs one-at-a-time and beat at a low speed. Mix in the dry ingredients slowly. Add the passion fruit pulp and beat until blended. Fill the cupcake holders 3/4 full of batter and put in the oven for 30 minutes. When firm on the top, let cool on a rack for 20 minutes.
Combine the cream cheese, sugar, vanilla extract in a large mixing bowl and mix on medium speed until smooth. Slowly pour in the heavy cream. Stop and scrape the bottom of the bowl a couple of times while you continue whipping until the cream can hold a stiff peak.
Variations: flavor frosting with fresh passion fruit seeds/pulp or juice concentrate.
