

Lychee Yogurt Mousse
This is a light and refreshing dessert made with lychee and yogurt. It is rich and creamy and very simple to make.





- 2 Cans lychee + juice
- 1/4 cup sugar
- 1 cup whipping cream
- 1/2 cup plain natural yogurt
- .7 ounces or 1/2 envelope of gelatin powder
- 4 tablespoons water
Open lychee can and leave aside a few pieces of lychee for decoration (optional).
Put about 10 lychee + syrup to equal 1.5 cups and puree in blender. Add sugar to lychee puree, stir until dissolved. Mix lychee puree into yogurt in a mixing bowl, set aside. Melt gelatine with water over simmering heat, set aside to let it cool down. Beat whipping cream until soft peaks form. Fold whipping cream into lychee yogurt mixture and add in gelatine. Mix well.
If you prefer, you can split the mixture in two and add red food coloring to desired color. Spoon mousse into glass jars or ramekins and layer each color accordingly. Chill for 2+ hours and serve cold. Garnish with lychee slices if desired.
