

Stir Fry Miso Udon w/Chicken
Stir fried udon noodles and vegetables make the best meal when you don't have a lot of time. This version is tossed with a savory miso-soy sauce.

Prep Time: 5 | Cook Time: 10 | Ready In: 15
- 12 ounces cooked udon noodles*
- handful of your favorite vegetables (snow peas, bean sprouts, slivered onions, bok choy)
- 1/2 cup cooked chicken
- 2 tablespoons vegetable oil
- 1 teaspoon butter
- 1 teaspoon sweet soy sauce
- 1 tablespoon miso paste
*I use the dried hula brad udon noodles from Hawaii
Cooking Process:
Cook udon noodles and set aside in collander. Chop vegetables and chicken. Heat oil and flash fry vegetables, but don't overcook. Add butter and toss in udon noodles and chicken. If you want to use raw chicken, cut chicken into pieces and cook thoroughly before adding vegetables or noodles. Season with soy and miso...salt and pepper if necessary.
