Betty Shimabukuro's Ramen Burger

This is Betty Shimabukuro's version of the popular ramen burger using a hamburger recipe from the Hisago Delicatessen in Hawaii.  You can watch Betty make this burger on our new cooking show on Cooking Hawaiian Style.  The ramen burger continues to gain momentum.

Ramen Burger Buns

This requires several plastic containers, the size that sour cream or margarine comes in.

  • 1 package dry ramen noodles, any flavor, with seasoning packets
  • 1 egg
  • 3 round plastic containers, 4 inches in diameter 
  • 1/4 cup vegetable oil

Hisago Burger

  • 1-1/2 tablespoons dehydrated onion
  • 1/2 cup hot water
  • 4 slices white bread, torn in pieces
  • 2 pounds ground beef (80 percent lean)
  • 1-1/2 tablespoons minced celery
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon pepper, or to taste
  • 1 teaspoon vegetable oil

Cooking Process:

Ramen Burger Buns

Bring pot of water to boil. Add noodles and seasoning packet. Cook until noodles are tender but not soft, 2-3 minutes. Drain; let cool to room temperature.

Place ramen noodles in bowl. Beat egg and pour over noodles, tossing to coat well. Divide noodles between 2 plastic containers. Top each with piece of plastic wrap or baking parchment. Place 1 container on top of the other. Place third container on top of stack. Place a weight such as a can of beans into the top container. Place entire stack in refrigerator and chill about 1 hour. 

Heat 2 tablespoons oil in skillet over medium-high heat. Carefully remove ramen burger buns from containers and place in oil. Fry until light brown and crisp. Add more oil to pan and turn buns. Fry until done on other side. Remove and let drain on paper towels. Serves 1.

Hisago Delicatessen Burger

Soak onion in hot water until soft. Pour mixture over bread pieces and toss until bread falls apart and forms a soft paste (add more water if needed). Add beef, celery, salt and pepper; toss lightly to combine.

Form into 8 patties about 1 inch thick. Make a depression in the center (this helps the burger cook evenly).

Heat oil in skillet. Fry burgers on medium-high heat until cooked through, about 5 minutes per side.

For sandwiches use: boneless teriyaki chickenkalua porkteri hamburger patty (cooked), 1 piece bulgogi, sliced.

For garnish: grilled onions, arugula, chopped green onion, teriyaki or BBQ sauce, chopped kim chee or any of your favorites!
