Papahana Kualoa's Limu Namasu
Papahana Kuaola makes this amazing limu (seaweed) namasu (pickled salad) on a special episode of Cooking Hawaiian Style presented by the Royal Hawaiian Center in Waikiki.
1/4lb. limu manauea
1/4 cup round onion, fine julienne
1/4 cup rainbow carrot, fine julienne
1/2 cup akulikuli kai (pickleweed)
1 cup kai n?oi (chili pepper water)
1 cup rice vinegar
1 cup simple syrup
Clean limu thoroughly and combine all ingredients in a bowl. Chill in refrigerator until ready to serve.
