ARCHIE KALEPAs SWEET POTATO & SPROUT SALAD W/ ALOHA SHOYU SESAME GINGER VINAIGRETTE
Lanai cooks with accomplished Maui waterman Archie Kalepa. Archie makes some of his favorite healthy dishes including Sweet Potato & Sprout Salad with Aloha Shoyu Sesame Ginger Vinaigrette. Give it a try, you will love it!
1 cup Sunflower greens
1 cup pea sprouts
1 cup radish sprouts
1, Okinawan Sweet Potato, baked peeled and diced
1 Sweet maui onion, sliced
3 cups lettuce/greens
Aloha Shoyu Sesame Ginger Vinaigrette
¼ cup vegetable oil
¼ cup sesame oil
½ cup apple cider vinegar
¼ cup Aloha Shoyu
1" piece ginger, grated
salt and pepper to taste
Add lettuce/sprouts to a bowl and top with sprouts. Peel cooked okinawan sweet potato, dice and set aside. In a separate bowl, add vinegar, grated ginger, shoyu, salt and pepper. While whisking, drizzle both sesame and vegetable oil into vinegar/shoyu mixure.
Set aside in refrigerator until ready to use. When ready to serve, drizzle desired amount of dressing over greens. Top salad with diced sweet potato.
